Carrot Cake

What you Need-

Cake:

  • 4 eggs
  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 3 cups grated carrots
  • 3/4 cup oil

Frosting:

  • 2 packages of soft cream cheese
  • 1/2 cup soft butter
  • 1 1/2 cups powdered sugar
  • 2 teaspoons vanilla

How To Make-

Cake:

  1. Preheat oven to 350 degrees F. Grease & flour two 9 inch round pans
  2. In mixing bowl, combine all wet ingredients and stir well. Slowly mix in dry ingredients and stir to blend.
  3. Add in carrots.
  4. Divide batter evenly when pouring in pans.
  5. Bake for 30 minutes or until tester placed in the middle comes out clean.

Frosting:

  1. In separate bowl, beat the cream cheese and butter until well mixed. Add powdered sugar, beat again. Add vanilla and beat again until fluffy.
  2. Once cakes are completely cooled, frost the top of one of the cakes. Place unfrosted cake atop the frosted one and frost over both cakes.
