What you Need-
Cake:
- 4 eggs
- 2 cups flour
- 2 cups sugar
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 3 cups grated carrots
- 3/4 cup oil
Frosting:
- 2 packages of soft cream cheese
- 1/2 cup soft butter
- 1 1/2 cups powdered sugar
- 2 teaspoons vanilla
How To Make-
Cake:
- Preheat oven to 350 degrees F. Grease & flour two 9 inch round pans
- In mixing bowl, combine all wet ingredients and stir well. Slowly mix in dry ingredients and stir to blend.
- Add in carrots.
- Divide batter evenly when pouring in pans.
- Bake for 30 minutes or until tester placed in the middle comes out clean.
Frosting:
- In separate bowl, beat the cream cheese and butter until well mixed. Add powdered sugar, beat again. Add vanilla and beat again until fluffy.
- Once cakes are completely cooled, frost the top of one of the cakes. Place unfrosted cake atop the frosted one and frost over both cakes.
